Gluten Free Blueberry and Lemon Zest Pancakes
This past week I have been obsessed with Blueberries and Lemon Zest. I capitalized these words because I was just excited. The marriage of those two have brought about blueberry and lemon zest cupcakes, scones and pancakes. Today I am sharing my pancake recipes, that i made up on the fly because I still had some blueberries left.
I hope you will enjoy these high protein and high fiber pancake. They will keep you going with energy throughout the day.
1 cups ground gluten free oatmeal flakes
1/4 cup oat groats
1 cup brown rice flour
1 tablespoon chia seed
1 teaspoon gluten-free baking powder
¾ teaspoon salt
1 cup blueberries frozen blueberries for the pancake mix (organic)
1 ¼cups unsweetened almond milk
2 tablespoon maple syrup
1/2 teaspoon lemon juice
3 tablespoons softened coconut oil
