Gigi’s Fluffy Pancakes with Nutella, Almonds and Chocolate chips

One of my favorite things in life is spending time with my family,  especially my grandkids. I love those little munchkins.  Lol.😄.  Today was their last day with Gigi and so I decided to make them a treat. My fluffy pancakes with Nutella, almonds, chocolate chips and powdered sugar. Sometimes you need to just indulge.



This is a simple and easy recipe. The key, don’t over mix. Allow science to happen.



1 cup  organic all purpose flower, sifted

2 tsp baking powder

Pinch of sea salt

2 tbsp organic cane sugar

3/4 cup plus 2 tbsp almond milk, or regular

1 large organic egg, beaten

2 tbsp unsalted butter, melted

1 tsp pure vanilla extract

Coconut oil or any vegetable oil, for cooking

Directions :
Combine flour, sugar, salt, and baking powder into a bowl and mix well.

In a separate bowl, mix the egg, milk, vanilla, and melted butter together. Make sure your butter is not hot, or you will cook the eggs.

Pour the wet ingredient mixture into the dry ingredients and fold the ingredients gently,  till mostly incorporated. The batter should be thick and a little lumpy, but without seeing any of the flour. If the mixture is too thick, add more milk.

Be sure to NOT OVERWORK  the batter. Overworking the batter, gives you chewy and hard pancakes. Allow the batter to set for 5-10 minutes, this is where the magic of science comes into play. The longer the fluffier the pancakes will be.

Heat a heavy-bottomed, non-stick pan over a low-medium heat and coat it with oil, the purpose of this is, so they can rise properly and cook all the way through.
Use a 1/4 cup measure to scoop and drop the batter into the pan so that you get evenly-sized pancakes.

Cook until the first side is golden brown, or until the top surface forms bubbles. Flip your pancakes over and repeat on the other side.  A little tip:  The second side will cook faster,  so adjust your heat, so they don’t burn.
Remove from the skillet onto a plate.  I added chocolate chips on each pancake and stacked another pancake on top, repeated that process. Add more chocolate chips on the top pancake, with chopped almonds, Nutella and powdered sugar.  Serve immediately.
