Spa Day ~ The Woodhouse Day Spa – Avalon

I am truly a spa girl. I love taking time out from the busyness of the world and going to the spa and getting a little pampering. I had the opportunity to enjoy a media day at The Woodhouse Day Spa – Avalon. I was very excited, but since I go to so many spas. I was wondering what will be different about this one. When I walked in the spa, I was immediately greeted by their staff and surrounded by all natural and organic products. I took a deep breath and was filled with this beautiful calming aroma of their Calming Woodhouse “Escape”, pulling me in to explore this natural French country inspired space with touches of nature perfectly placed .

As soon as I entered further, I was greeted by one of the owners Kelly Bachtell with the most gorgeous and pleasant smile and southern hospitality, she handed me a glass of champagne and delicious snacks accompanied by some yummy desserts.

We engaged in a conversation about why they opened up The Woodhouse Day Spa- Avalon, but we talked about me and my needs. I felt so encouraged about how she was interested in knowing who I was and what interest me.

I love that it’s owned by a married couple, that’s a residents of the community. They decided to open up the spa to give their community a place to come and unwind and feel at home at the same time. I know I felt like that, at home, from the decor to the warm staff, but especially from the owners Justin and Kelly Bachtell.

The Woodhouse Day Spa- Avalon officially opens March 12th, 2018 with 18 treatment rooms and offers over 50+ different services, from massages, body treatments and something we all need sleep treatments. But here’s what makes them different in my opinion and spa jet-setter, lol. 💕

Greens with Garlic Herb Sauteed Chick peas, Green Apples, and Vegan Cheese ( homemade)

This weekend was amazing! I renewed my vows to the love of my life, 20 years and counting. The house was bursting with cheer, family and friends all weekend. It was a blast! Honestly, we both felt this wedding was more exciting and very powerful than our first one. I guess that has to do with 20 years, of experiences, struggles, victories and so much wonderful growth in us both. Well, everyone is gone home. The cajun food, themed reception we had, with Mardi gras mask and all, are all put away and everything is eaten, accept a little jambalaya my husband and son has devoured.  Now back to my food and sharing Set the Table with Love recipes with you guys.  I love this salad, I made today,  because it is made with one of my favorite food brands, Go RAW foods. I used their watermelon seeds, that are loaded with 11 grams of vegan protein, to make my vegan cheese. I added some garlic herb seasonings to it and you have vegan cheese. The watermelon seeds made the cheese very buttery and nutty. It’s a winner, plus loaded with protein and only 4 grams of carbohydrates. YES!!!!

This recipe has 22 carbs and 20 grams vegan protein.  I ate the whole big bowl. Off to my walk.

Well here’s the recipes.

Ingredients:

SALAD

2 cups chopped kale

1 cup romain, bibb, or any other leafy green, you prefer. I used Bibb lettuce.

Few leaves of your favorite herbs. I used cilantro, from the garden

1 large green apple, chopped

1/2 cup chick peas, rinsed and drained

1 tsp McCormick No Salt Garlic Herb Seasoning

VEGAN CHEESE:

2 tbsp Go Raw watermelon seeds

1 tbsp McCormick No Salt Garlic Herb Seasoning

1 tsp cayenne pepper

pinch of sea salt

TIP: I added a few of my sautéed chick peas to the food processor to give it more flavor and depth. That will also increase the protein factor.

Directions: 

Wash, gently pat dry and mix the greens, apples and herbs in a large bowl. Set aside. In a sauté pan on medium heat, add enough olive oil to cover the pan, add in the chick peas and the seasoning. Stir. Cook for about 2-3 minutes until the seasonings have browned just a little. Remove from heat. Allow the chick peas to cool, so they do not wilt the greens.

Add the watermelon seeds into a food processor. Process, until you get a small, fine crumbles. Add in the seasons, and gently pulse again, until the seasonings are incorporate into the seeds.

Assemble.  Add the cool chick peas ( with the sautéed spices) and vegan cheese mixture into the salad and gently toss.

Drizzle with a little lemon juice and extra virgin olive oil.

Beautiful Energy Food – Vegan Cole Slaw for wrinkles….Yes!

So I looked in my fridge and found one green apple, one zucchini and one little small head of red cabbage. Hmmm… I am hungry and  I “eat on purpose”. So this is the purpose:  conquer hunger, get some energy and I am in my 40’s, so how is this meal going to keep me looking and feeling amazing! I got it!! A slaw.

So here is my late lunch “eating on purpose” lunch, My Raw Red Cabbage, Green Apple and Zucchini Salad with dried cranberries, this salad is dressed with a homemade apple cider lemon vinageriette. Super Yummy A total Beautiful Energy Food, High in vitamin A, B and C and E. Not only it is loaded with vitamins but these veggies and fruits are antibacterial, anticancer, anti – inflammatory, boost immunity and promotes healing from the inside out.

A Vegan Slaw for my wrinkles

Here is another little tidbit:

Did you know that red cabbage is one of the only four vegetable that is high in vitamin E ,  in time results in good skin and a good heart. I topped the slaw/ salad with some Bhujan Crunchy seasoned roasted peas. You can get them from any grocery store .

The recipe is simple just shred everything in a bowl

The dressing is simple as well:

3/4 cup olive oil (good quality)
1/2 cup apple cider vinegar
2 tablespoons lemon juice
2 tablespoons honey ( optional)  I am not doing sugar, so I added none here
1/2 teaspoon of sea salt
1/4 teaspoon red pepper flakes

Add everything to a blender and blend throughly.  Put in a bowl 1/2 cup of the dressing add all the salad ingredients to the bowl with the dressing and toss. I used a half of cup of dressing for this recipe you will have plenty left over so just store in a mason jar or a glass container with a tight seal. * Make the dressing first then shred the fruit and veggies, they apple will get brown so add the salad ingredients immediately into the dressing.
