Vegan Sloppy Joes Stuffed in a Sweet Potato

Growing up as a kid. I absolutely loved eating sloppy joes. They were one of my all times favorites, but not the healthiest. So what does a girl do when she is taking on a 30 day vegan challenge and craving sloppy joes. No problem, add beans, instead of meat. This recipe has everything in it that I remember about my Mom’s sloppy joes growing up, that sweet, sour and smokiness that made them so good. I addd french lentils to this recipes, but you can add white northern beans or dark kidney beans, if you like. I mushed up some of the lentisl to give texture and left the rest whole. Lentils are high in plant based protein and fiber, so you are not missing any protein and it’s good for you. I hope you will use this recipe in your “Meatless Mondays” or any time of the week.

FOR THE LENTILS

COOK ACCORDING TO PACKAGE INSTRUCTIONS, BUT YOU WILL NEED A CUP OF LENTILS FOR THIS RECIPE AND I USED

LOW SODIUM VEGETABLE BROTH AND WATER FOR THIS RECIPE, FOR MORE FLAVOR.

FOR THE SLOPPY JOES

2 Tbsp olive oil

1 small white onion, finely chopped

2 cloves garlic, minced

1/2 cup red bell pepper, diced

1/4 cup poblano peppers, diced

Sea salt and black pepper to taste

1 15 oz. can organic tomato sauce

2 Tbsp brown sugar,

2 Tbsp low sodium vegan Worcestershire sauce

2 tsp chili powder

1 tsp ground cumin

1/2 tsp garlic powder

1/2 tsp smoked paprika

INSTRUCTIONS:

COOK YOUR LENTILS ACCORDING TO PACKAGE INSTRUCTIONS. I USED HALF VEGETABLE BROTH, INSTEAD OF JUST WATER. Once cooked, rinsed and drained, set aside.

In a large skillet over medium heat, heat your oil. Once heated, add, add oil, onion, garlic, bell peppers and poblano peppers. Season with a pinch of salt and pepper and stir to combine.

Sautè for 4-5 minutes,until the peppers and onions are tender and slightly browned. Add in the tomato sauce, brown sugar, worcestershire sauce, chili powder, cumin,garlic and smoked paprika, Stir to incorporate the spices.

Add in the cooked lentill, stir to combine.

Continue cooking the mixture over medium-low heat until completely warmed through and thick, stirring occasionally – about 5-10 minutes.

Taste and adjust flavor as needed.

I added the sloppy joes on a sweet potato with some homemade vegan coleslaw.

Go Raw Raw Chick Pate bites

I am in love with #GoRaw Organic Sprouted Watermelon Seeds. I have snacked on the bag of seeds, made a big salad with them, a smoothie and yesterday I made Vegan RAW Nut Free Basil Pesto. Here’s the thing, a lot of us can not eat nuts. I love nuts, but sometimes we do not always get along. It’s all good though, we good people. LOL.

Today I would like to share this amazing appetizer, but you can spread this on some bread and there you go, a high protein sandwich. You can also wrap it in some butter lettuce and enjoy a nice lettuce wrap. The deal is you will love the diversity of this recipe, but better than that, is the fact, it’s loaded with nutrition and plant based protein.

Go Raw  Raw Chick Pate 

Ingredients~

Base

1 1/2 cups gluten free oats

1/2 cup Go Raw Sprouted Organic Watermelon seeds

1 cup chopped cauliflower florets

2 tbsp extra virgin olive oil

Juice of 2 lemons, about 4 tbsp

1/8 tsp turmeric  ( optional, but gives the pate a beautiful color)

1/2 -1 cup water, as needed, for your desired texture

Chick Pate 

1/12 – 1 cup chopped apples ( I used gala and a whole cup. I love apples) 🙂

1/2 bunch fresh parsley, chopped

1/4 cup yellow onions chopped

2 stalks celery, chopped

1 tbsp garlic herb seasoning ( Salt Free)

Salt and Pepper to taste

Directions ~

To make pate base, in a food processor add the base ingredients, Except the lemon juice and water. Add the lemon juice first, 2 tbsp at a time. Look at the consistency, it should be a thick creamy based, but not watery. If it is too watery. Add more Watermelon seeds to your food processor and blend well.

Scoop the pate base into a large bowl. Add the remaining ingredients and mix well. If the pate is too thick, add a bit of water and stir. Season to taste.

Slice up cucumber circles about 1/4 – inch thick and the Raw Chick Pate on top of each slice and garnish with fresh parsley and a cherry tomato slice.

These make a great appetizer for your next party.

Red Quinoa Olive Tapenade

I love olives and I especially love olive tapenade, but I thought today let’s give this appetizer a little vegan protein boost. I love the texture that the quinoa adds to this recipe.  You can add this on sandwiches as a spread. You can also use it in pasta as like a pesto or top on salads.

Red Quinoa Olive Tapenade

 

Ingredients:

1 cup of cooked red quinoa, follow instructions on back of packaging, set cooked quinoa to the side to cool.

2 cloves garlic, peeled

1 cup pitted kalamata olives

2 tablespoons capers

3 tablespoons chopped fresh parsley

2 tablespoons lemon juice

2 tablespoons olive oil

1 teaspoon of organic honey

salt and pepper to taste

Directions:

Place the garlic cloves into a blender or food processor; pulse to mince.  Add the cooled quinoa to the food processor. Add the olives, capers, parsley, lemon juice, honey and olive oil Blend until everything is finely chopped. Season to taste with salt and pepper. I garnished with chopped tomatoes and fresh parsley from my granddaughter’s garden.  Enjoy!

Gluten free Vegetarian Cauliflower Veggie Pizza

I keep hearing my friends say they have gluten intolerance, so I wanted to share this enhanced version of my Cauliflower Veggie Pizza sticks. This recipe will make you feel like you are not missing the bread and also Cauliflower is a low carb veggie. Yay Me!!

Ingredients:

Pizza Crust

1 1/2 cups grated cauliflower

1 teaspoon olive oil

1 cloves garlic, grated or minced

1 large egg, lightly beaten

4 1/2 oz white sharp cheddar, freshly grated and divided

1/2 cup parmesan cheese, 1/4 cup for topping

1 teaspoon dried Italian herb seasoning, divided

sea salt

pepper

Ingredients:

For Sautéed Veggies

11/2 teaspoon olive oil

1 cup zucchini, chopped, small

1 cup yellow squash, chopped, small

1/2 cup red bell pepper, chopped, small

1/4 cup grated parmesan for garnish

freshly chopped basil for garnish

Directions:

Preheat the oven to 350F.
Grate the cauliflower, using a cheese grater or a food processor. Put the grated cauliflower onto two pieces of parchment paper on a cookie sheet. Place in the oven and roast for about 7-10 minutes, spread it out so it doesn’t steam.  Add the roasted cauliflower into a large bowl.  Keep the oven on and remove all the cauliflower from the sheet and spray the sheet with the olive oil and set aside.

Add the garlic, egg, 4 oz of the cheese, 1/2 cup of the vegetarian  parmesan cheese (Belgioioso, sells a vegetarian parmesan) 1/2 teaspoon of the dried Italian herb seasoning (reserving 1/2 teaspoon for topping later), and a pinch of sea salt and pepper. Stir to combine and then spread on a sheet pan forming it into a pizza crust.

Bake until set and starting to turn golden, about 25- 30 minutes.

Preheat the broiler. Cut the crust into sticks. Slightly separate the pieces and sprinkle the remaining cheese on top along with the remaining 1/2 teaspoon dried Italian herb seasoning. Broil a minute or two, until the cheese is melted and golden in spots. Add sautéed veggies and more parmesan cheese if you like. Serve hot or warm.

Directions for Veggies: Add oil to a pan on medium heat and sauté the veggies until slightly tender, top on your pizza crust with garnishes.

RAW Breakfast Burrito

I love making breakfast. It is truly my favorite meal of the day. So, I woke up this morning and I was craving a yummy burrito. Why? I do not know. I get weird cravings every now and again. But I wanted something clean and raw. I looked in the my fridge and was like, Eureka! I got it! A Raw Breakfast Burrito. This recipe is so versatile and easy to make. Add your own favorite veggies and spices to get a totally new experience. I hope you enjoy trying this Raw version of a Breakfast Burrito.

Ingredients: 

1 medium avocado, peeled and seeded

2 large chard leaves halves ( this will be your tortilla)

1/2 cup chopped organic baby bella ( mushrooms)

1/2 cup chopped red bell peppers

1/2 cup  sliced red cabbages

1/2 -3/4 cup grated cauliflower( this will be your cheese)

1 tsp of olive oil ( to massage into the chard leaves)

1 tsp of garlic powder

1 tsp or more of turmeric, (to color the avocados, this will make it look like a scrambled egg)

sea salt and pepper to taste

Directions: Mash the avocado with turmeric, sea salt and black pepper. Set a side. Take the chard leaves and drizzle a little olive oil on them. Massage the leaves,until they are covered with the oil. Add the avocado mixture. Next, Add all your veggies to the burrito, one on top of the other. I like to add my cauliflower aka cheese last. Spring a little sea salt, pepper and garlic powder if you like. You want to roll and tuck the chard until you have a nice burrito. Make sure to roll and tuck the chard toward your body. I like to cut it in half  to reveal all that yumminess. Enjoy!

Polenta with butternut squash veggie ragout

All day my son and I have been spending time cooking some creative dishes. He is out of school for Spring break so we get to have some fun in the kitchen. I love trying new things, so today I mixed butternut squash into my polenta recipe. It tasted delicious!  I also made an organic ragout. I hope you enjoy this recipe.

Polenta with butternut squash with a veggie ragout

You will need:

Polenta:

1 1/2 cups of yellow corn grits

4 cups of water

1/2 cup of organic butternut squash ( frozen)

1/2  cup of 5 Italian Blend shredded cheese

Dash of black pepper, salt and garlic powder

Ragout

1 tbs of  olive oil

2 small zucchinis ( diced)

1 half of a med onion( chopped roughly)

1 med tomato (  deseeded and chopped size of the onions)

1/2 cup of smoked sundried tomatoes ( have that bacon taste)

2 garlic cloves ( chopped finely)

1/2 cup of dried porcini mushrooms

1/2  tsp of dried fennel seed

1/2 tsp of italian seasonings

1/2 tsp of sea salt

1/2 tsp of garlic powder

Dash of black pepper to taste. I like it a little spicy. 🙂

1/2 cup of water to keep ragout wet until veggies are tender ( I add water as needed, this is optional the tomatoes should give you enough water)

Ragout

Sauté  onions and zucchini until transparent.

Add the the raw tomatoes and the garlic and sauté for 5 minutes.

Add all  your spices and stir all the veggies.

Bring everything to a boil. Cover and simmer for 20 minutes.

About 5 minutes before the dish is done add the mushrooms and sundried tomatoes to rehydrate. Continue to cook.

Serve on top of the Polenta

Polenta

Bring water to a boil. Add Butternut Squash. Allow to cook for 10 minutes remove the squash and mash most of it up in a bowl. Leave some pieces whole it makes the polenta look pretty. Add squash back to water. Bring the water back to a boil. Reduce to a simmer. Pour in polenta steadily, stirring constantly. Continue to stir until polenta is thickened.  Add the cheese, black pepper, garlic and sea salt.  Stir throughly. It should come away from sides of the pan, and be able to support a spoon. Cooking time 20 to 30 minutes.

To plate with LOVE:

Put polenta in a nice plate or bowl.
Add the Ragout and top with some of the 5 italian cheese blend or some parmesan. Sprinkle some parsley flakes for garnish and drizzle with a little olive oil.

Oh yes one last thing. Set the table with LOVE.
