Go Raw Key Lime Coconut Tarts

I am so enjoying using all my Go Raw junk free foods, to create some yummy recipes, savory and sweet. I am on the sweet treats right now. I had my granddaughter over yesterday and we made these yummy little tarts. They make a healthy and delicious treat for kids, quick dessert, yummy break and of course, great for an afternoon snacks.  I know you will enjoy them as well.

Go Raw Key Lime Coconut Tarts

Ingredients:

Crust:

1 1/2 cup Go Raw Apple Cinnamon Sprouted Granola

1/2 cup dried cranberries

1 tbsp maple syrup

1 tsp coconut oil

1 tbsp juiced orange

pinch of sea salt

1 tbsp purified water, as needed

Filling

1 medium Hass avocado, pitted and peeled

1⁄2 cup melted coconut milk

1⁄4 cup freshly squeezed lime juice

1⁄2 cup pure maple syrup

1 tablespoon coconut oil, melted

1 teaspoon vanilla extract

Pinch sea salt

1 tablespoon lime zest

Directions:

To make the crust, add the Go Raw Apple Cinnamon Sprouted Granola, dried cranberries, and sea salt to your food processor.  Add the oil and orange juice. Process until the ingredients are mixed and broken down well, and they stick together when you collect a small handful and squeeze. If they are not sticky enough, add a little water to the mixture, a little at a time, until they are sticky .

Oil the mini tart pan, with coconut oil.  Take a small ball full of mixture into your hands and press each ball down into the mini tart pan. The recipe will make about 6-8 mini tarts. Place in the freezer to set. Start on your filling.

Blend the filling ingredients together in a high-speed blender or food processor until silky smooth. Remove mini tart crust from the freezer, add the filling into the mini tart crusts, use a spatula or inverted knife to make the top very smooth. Add a piece of Go Raw junk free food Tangy Lime Coconut Crisps as a nice garnish, also sprinkle the lime zest onto each mini tart.

Chill the pie in the freezer for an hour, then transfer it to the fridge and let it set for another 1 hours. Serve chilled.

No oil baked Sweet Chipotle Sweet Potato Fries

This post is inspired by my Instagram friend Cristian Peters. She has this amazing blog called Simply Clean Cooking. Please go and check out her delicious blog. She is one of my inspiration to eating more Vegan based foods. Yesterday, she posted these amazing No oil/ Baked Crispy French fries. I guess the Irish makes me crave potatoes all the time. I decided today to try this technique out on my family. I know my husband and son, so I have to do a test run first. They have not converted over to a plant based diet completely, yet. So these fries have to be delicious!!

Here’s what I did. 

Preheat the oven to 415.

I took one medium sweet potato. Peeled it and cut it into 1/4-1/2 inch thick fries.

I rinsed the fries and patted them dry with a towel. Sweet potatoes are a lot drier than regular white potatoes, so rinsing them I found helps the baking process. Science. 🙂

I put parchment paper onto a cookie sheet and placed the fries on the parchment paper lined cookie sheet. Separate them, so they can crisp up.

Bake for 12-17 minutes. It took my fries about 15 minutes to cook. If you can put a fork through them, they are ready. Once they are fork tender.  I turned on the broiler and cooked them for another 2-3 minutes.  DO NOT PUT THEM UNDER THE BROILER. YOU WILL CATCH THE PARCHMENT PAPER ON FIRE. Keep them in the oven.

This really crisped them up. WATCH THE BOILER, SO THEY DO NOT BURN. SWEET POTATOES HAVE LOTS OF SUGAR IN THEM. 🙂

Pull them out once they are brown enough. I sprinkled a nice Sweet Chipotle Rub on them while they were still hot.

Here’s the rub:

1/4 tsp. paprika, chili powder, garlic powder

1/8 tsp. sea salt

pinch of organic cane sugar.

Mix ingredients together and sprinkle over hot fries. Eat and Enjoy.

Spicy Garlic Kale Chips

This weekend I enjoyed my grandson, but he came over with a cold. He is too irresistible to not hold, kiss and just eat up. I woke up this morning with a sore throat, achy body and a headache like a truck run me over a few times. I decided today I was going to rest and eat food that will help nurse my cold and make me feel comforted.

I love my friend Felicia who called me to see if I needed anything, but I have all the holistic medicine I need in my pantry and fridge. But God knows I appreciate her heart to want to take care of me.  Last night I made for my boys homemade Lasagna. They loved it. I took the leftover homemade pasta  and made this Vegan Fettuccine in Garlic oil with fennel, peppers, tomatoes and onions. You can find my pasta recipe in my cookbook, Set the Table with Love.  I also made my Spicy Garlic and Onion Soup, this time I added some porcini mushrooms. Well my last garlic treat is these yummy Spicy Garlic Kale Chips. Super easy to make.

Spicy Garlic Kale Chip

Pulled kale leaves from bushel of dark kale ( I pull the leaves off and break them into chip size bites, without the stem)
1 tbsp garlic flavored olive oil, or regular olive oil ( enough to cover the kale lightly)
Garlic Powder, to taste
Pinch red pepper flakes or cayenne pepper, to taste

Preheat oven to 170. Place kale on a cookie sheet & drizzle the olive oil over top. Toss well to make sure the kale is evenly coated, then spread it out evenly in the pan. Sprinkle a little of the garlic powder and cayenne pepper or your a pinch of red pepper flakes. Bake for 1 hour.

Place in your favorite chip bowl and enjoy.
