Vegan Sweet Potato Shepherd’s Pie

What do you do with a large sweet potato and a bag of French lentils and you are just craving home and comfort? Shepherd’s pie and a Vegan Sweet Potato Shepherd’s Pie.

So let’s get a bit familiar with this pie:

Shepherd’s pie, common and inexpensive British dish originating from the sheep country in Scotland and northern England. It is a baked meat pie made with minced or diced lamb and topped with a thick layer of mashed potatoes. Although the dish is sometimes called cottage pie, that name is usually given to a version featuring beef. Shepherd’s pie in my household was actually one of my favorite dishes. My mom would make it in the fall and winter months. My favorite part was was the mashes potatoes and sweet peas and carrots. I wasn’t a big meat eater growing up, but you ate whatever mom put on the table. I remember times being hard for us growing up, but my mother made sure we had a hot meal, clean clothes on our backs and lots of laughs. She was a very funny woman. Shepherd’s pie was special , it was comforting and a time to cuddle up with my family and enjoy a warm hearty meal together. My mother used ground beef, carrot, sweet peas, celery, onions and garlic as the base with lots of thyme. It was so yummy. I believe I have made this recipe only once in my life. Why? Why would I make a childhood favorite only once, because some dishes your mom just makes better, she adds that special mom LOVE ingredient.

This is what brought this recipe to life. Mother’s Day is coming up and I am missing my mom. She has been gone for 16 years now and I this time of the year I miss her so much and I just wanted to feel home. I do not eat meat like that anymore, no I am not a vegan or a vegetarian, but my body craves plants more so I listen. Honoring myself and what my heart was desiring birth this lovely and delicious version of Shepherd’s pie. I hope you enjoy it and it brings your soul comfort and a smile.

Sweet Potatoes

SWEET POTATOES

  • 1  large organic sweet potato (thoroughly washed, peeled and roughly chopped into big chunks)
  • Organic vegetable broth
  • 1 Tbsp coconut oil
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp thyme
  • 1 tsp or more of maple syrup, depending on how sweet the potatoes are.
  • sea salt and black pepper to taste
The Filings

FILLING

  • 1  cup French lentils, cooked (follow instructions on package)
  • 1 Tbsp coconut oil
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 small bay leaf
  • 2 tsp fresh thyme
  • sea salt and cracked black pepper to taste
  • pinch of red pepper flakes
  • 1-2 small carrots, peeled and diced
  • 1 celery stalk, diced
  • 1 cup frozen corn
  • 1 cup frozen peas

Vegan Sweet Potato Shepherd’s Pie

Instructions

  1. Place sweet potato in a large pot and fill with water until they’re just covered. Bring to a boil over high heat. Then reduce to medium-high heat and cook for 15-20 minutes or until you stick a fork in it and it breaks apart.
  2. Once cooked, drain and transfer to a large mixing bowl. Use a masher or fork to mash until smooth. Add coconut oil, all the spices and season with salt and pepper to taste. Cover and set aside.
  3. Next heat a large pot over medium heat. Once hot, add coconut oil, onions, and garlic and sauté until lightly browned and caramelized – about 4-5 minutes.
  4. Add a pinch of salt and pepper. Then add lentils, vegetable broth, bay leaf and the thyme, and red pepper flakes and stir. Bring to a low boil. Then reduce heat to simmer. Continue cooking until lentils are tender (20-30 minutes).
  5. In the last 15 minutes of cooking the lentils, add the carrots, and celery. Cook until the carrots and celery are a bit tender, but not mushy. Add in the frozen corn and sweet peas, stir, and cover and allow to cook for another 2-3 minutes. Drain the lentils. Taste and adjust flavor to your preference.
  6. Transfer the lentil mixture into oven-safe baking dish and top with the mashed sweet potatoes. Smooth down with a spoon.
  7. Set on a baking sheet to catch any juices come from the pie and bake for 20 minutes or until the potatoes are lightly browned on top and the edges are bubbling.
  8. Let cool at bit before serving.

Sweet potato toast is the new craze out there, if you are trying to cut back on the bread. I love this new take on toast.  The toppings are endless, you can go sweet or savory.

Sweet potato toast is simple to make and you make several slices of the toast and keep them in the fridge for up to 7 days and pull them out when you need them and add your favorite toppings. Here’s the easy recipe:

Sweet Potato Toast

Ingredients
1 large sweet potato

Sweet Potato Toast : Sweet ~ Almond Butter, Granola and Cherries Savory ~ Avocado, Smoked Paprika and Olive Oil

Instructions:

OVEN 
Preheat the oven to 400ºF and line a baking sheet with parchment paper to help prevent sticking.

Peel the potato. This is optional. I peeled the the ends of the sweet potato off, cut the potatoes in 1/2 inch slices.

Bake until the slices are tender and easily pierced with a fork, about 20 minutes. Serve warm with your favorite toast toppings.

Store any leftover sweet potato slices in an airtight container in the fridge for up to a week. To reheat for an easy breakfast, just add to your toaster on the medium setting to heat up, remove and add your favorite toppings.

TOASTER

Ingredients
1 sweet potato, cut into 1/4 inch slices

Instructions
Peel your potato and add it to your toaster. It may take you three times to cook and toast the sweet potato completely.  Every toaster is different, so you will know it is done when the sweet potato is tender and brown on the edges. Remove it from the toaster and add your favorite ingredients: nut butters, avocado, jams, jelly, granola, nuts, apples slices, whatever, you get creative.

Sweet Potato and Poblano Pepper Hash  

Ingredients

1 large organic sweet potato peeled and cubed
1  small red onion, diced
2 tablespoons olive oil
2 cloves garlic, minced
1 poblano peppers, diced
1 small red bell pepper, diced
1 small yellow pepper, diced
1 cup broccoli pearls
1 cup of black beans
1 handful of cilantro, roughly chopped
a pinch or two crushed red pepper, to taste
salt and pepper, to taste

Instructions
Heat olive oil in a cast iron skillet over a medium-high heat. Add the onions and peppers and cook for about 2 minutes until they begin to soften, add the sweet potato, broccoli pearls, salt,  and crushed red pepper. Cover and cook about 5 minutes, until the potatoes begin to soften. Add beans and cook for about 3-5 minutes until the beans are warmed up.  Taste and adjust seasonings if necessary.  Top with cilantro and garnish with lime ( optional) .

 

 

 

Veggie Plate Special of the Day ~ Roasted Eggplant, Charred Okra, Lemons and Sautéed Northern Georgia Candy Squash.

I remember growing up and going to those cafeterias with my family, that served the, Blue Plate Special, which included one meat, two veggies, bread and a drink. My family loved these deals, they were inexpensive and you got a good amount of food for the price. It was a great deal for a family of 5 and my dad and brother could eat, so they were in heaven.

My favorite thing was the veggie specials. You got all these yummy vegetables on your plate . I would fill my plate with collard greens, green beans and potatoes, sweet potato mash, corn and a big piece of cornbread.   Well, here is my version of a veggie plate special.

Roasted Eggplant

Directions
Preheat the oven to 400. Line a baking sheet with parchment paper.
Slice the eggplant in half lengthwise, then cut each half  crisscrossed. Drizzle olive oil over them and sprinkle dried thyme and sea salt over each eggplant.
Roast in the preheated oven until softened and golden brown, 25 to 30 minutes.

Charred Okra and Lemon

For the okra:

Trim the stems from the okra and cut each pod in half lengthwise. Place in a large bowl, add the salt, and toss to combine; set aside.
Heat a large, cast-iron skillet over high heat until very hot, about 3 minutes. Working in 2 to 3 batches so as not to crowd the pan, add the okra, cut-side down in a single layer, and sear undisturbed until charred on the bottom, about 2 to 3 minutes. Flip the okra and cook until crisp-tender, about 30 seconds more. Remove to a medium bowl.
Remove the pan from the heat, add the okra in the bowl. Recipe from Chowhound: Charred Okra

For the lemon:

Cut a medium lemon into slices . Add the lemon to the okra pan, allow to cook until caramelized, about 1-2 minutes. Remove from pan and place in a separate bowl.

Sautéed North Georgia Candy Squash

Peel the squash. Cut it in half, right in the middle of the squash, where you have rings of the squash. Remove the seeds, cut the squash into 1/2 inch rings. In a large sautéed pan,  add enough olive oil to cover the base of the pan, cook on medium heat. Add the rings, add salt and smoked paprika to the rings and allow to cook until golden brown on one side, 2-3 minutes, flip them over and sauté the other side, add salt and the smoked paprika and sauté into golden brown and tender.

Serve the veggies on a nice plate and even add a piece of Gluten  Free cornbread
