Buffalo Chicken Stuffed Peppers and Cornbread Muffins Stuffed with Vegan Chili

Super Bowl Sunday!!!! Are we ready? Well if you are looking for a what I call M and M ( modification and moderation) twist on a couple of super bowl favorites, you have come to the right place? These two will please all your guests. I love this recipe I found on https://www.wellplated.com/buffalo-chicken-stuffed-peppers/ I adapted the recipe, but Iove the whole M and M on this. Traditional buffalo chicken dip typically is made with cream cheese, here we are using tangy greek yogurt, also instead of cheddar cheese we are going for a low-fat mozzarella. I am also using peppers instead of crackers or tortillas which are typically used to enjoy the dip. My husband loved them.

Now for the Cornbread Muffins Stuffed with Chili. This is super simple. Bake the cornbread, and once cooled cut the tops off. Remove the tops and scoop a bit of the cornbread out and add the chili inside. You can add peppers, cheese, and sour cream.
