Farm to Table Weekend Retreat ~ Breakfast

NOW THAT’S A BIG EGG!
I had the best time last week putting on another Mindful Living retreat we had at Happi Farm. She gave me some turkey, duck, and chicken eggs to play with, so of course I made a quiche. It was a huge hit for my guests, so I had to make it for my family tonight. Here it is Smoked Gouda, Parm, Spinach, and Sundried Tomato Quiche. The turkey and duck eggs made this quiche super velvety and decadent. My husband said, “This is a super fancy quiche”. The grandkids ate it up. If you don’t have turkey or duck eggs, regular chicken eggs will work. I hope you enjoy this just as much as we did.


INGREDIENTS:

  • 10 large eggs ( I used a variety of eggs, turkey, duck, and chicken eggs)
  • 1 1/2 cups whipping cream or whole milk
  • 1 /2 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon freshly ground cracked pepper
  • 1/2 cup chopped onions
  • 2 garlic cloves , minced
  • 2 cups coarsely chopped spinach greens
  • 1/2 cup sundried tomatoes, in oil, julienned
  • 1 cup smoked gouda, grated
  • 1/2 cup parmesan, grated
  • 1/4 cup mozzarella, grated
  • 1/4 cup finely chopped fresh parsley

INSTRUCTIONS:

  • Heat the oven to 375°F and prepare the baking dish. Arrange a rack in the middle of the oven and heat to 375°F. Lightly grease your dutch oven.
  • Whisk the eggs. Place the eggs in a large bowl and whisk until fully beaten.
  • Whisk in the milk or whipping cream, salt, smoked paprika and cracked pepper, whisk until frothy. Add the smoked gouda, parmesan and mozzarella cheese
  • Add 2 tablespoons of extra virgin olive oil to a sauté pan, sauté the onions on medium heat for about 2 minutes until transparent. Next, add the garlic and saute for 1 minute.
  • Add spinach to the pan and season with salt. Cook until spinach has withered. Allow to cool down.
  • Next add the spinach, onions and garlic to the egg mixture.
  • Add mixture to the greased dutch oven or baking dish.
  • Bake for 45 minutes. Bake until puffed around the edges and when inserted with a knife in the center of the quiche, the knife comes out clean, about 45 minutes.
