Ingredients:
• 7 sheets phyllo dough (14 inches x 9 inches)
• 1/3 cup olive oil
• 4 ripe heirloom tomatoes, sliced about a 1/2 inch
• 1/2 cup shredded smoked Gouda cheese
• 1/2 cup shredded Parmesan cheese
• 1 tablespoon Sicilian seasoning or oregano
• 1/4 teaspoon salt
• 1/4 teaspoon pepper

Instructions:
1. Preheat oven to 375°F. Place one sheet of phyllo dough on a parchment-lined baking sheet. Brush the entire sheet with olive oil.
2. Sprinkle with 1 tablespoon shredded Parmesan cheese. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) Repeat layers, brushing oil all the way to the edges.
3. Sprinkle the final layer with smoked Gouda cheese.
4. Arrange tomato slices in a slightly overlapping pattern over the Gouda. Sprinkle with Sicilian seasoning, salt, and pepper. Bring up the edges of the tart to prevent the tomato running over the sides
5. Bake for 15 to 20 minutes, or until the phyllo is golden and crisp.
