Pimento Cheese and Bacon Biscuits with Parsley
Ingredients:
• 2 cups all-purpose flour (plus extra for dusting)
• 1 tablespoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup cold butter (cubed)
• 1 cup shredded sharp cheddar cheese
• 1/4 cup pimento (drained and chopped)
• 6 slices cooked bacon (crumbled)
• 3/4 cup buttermilk (plus extra for brushing on top)
• Optional: a pinch of cayenne pepper for a slight kick

Instructions:
1. Preheat Oven: Preheat your oven to 425°F . Line a baking sheet with parchment paper.
2. Prepare Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
3. Cut in Butter: Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut in the butter until the mixture resembles coarse crumbs.
4. Add Cheese, Pimento, and Bacon. Fold in the shredded cheddar cheese, chopped pimento, and crumbled bacon. If using cayenne, add it now for a bit of heat.
5. Add Buttermilk: Gradually add the buttermilk, stirring just until the dough comes together. Be careful not to overmix, as this can make the biscuits tough.
6. Knead and Roll Out Dough: Turn the dough onto a floured surface. Gently knead it a few times, then pat or roll it to about 1/2 inch thickness.
7. Cut Biscuits: Use a biscuit cutter or a glass to cut out biscuits, Do not turn the cutter when removing the biscuit this can make the edges tough. Next place them on the prepared baking sheet.
8. Brush with Buttermilk: Brush the tops of the biscuits with a little extra buttermilk to help them brown nicely.
9. Bake: Bake for 12-15 minutes or until golden brown.
