Vegan Cowboy Stew: A Nourishing Winter Meal Packed with Fiber and Protein

When the temperatures drop, there’s nothing better than a warm, hearty stew to bring comfort and nourishment. This vegan cowboy stew, loaded with nutrient-dense ingredients like sweet potatoes, pinto beans, chickpeas, and fire-roasted vegetables, is the perfect dish to keep you satisfied and energized. Not only does it taste incredible, but it’s also a powerhouse of health benefits.

High in Fiber

This stew is packed with fiber-rich ingredients, including sweet potatoes, beans, and chickpeas. Fiber is essential for maintaining digestive health, promoting regularity, and supporting gut health. It also helps regulate blood sugar levels, which is especially beneficial during the winter months when we’re more inclined to crave carb-heavy comfort foods.

Protein-Powered Meal

Despite being completely plant-based, this stew is rich in protein thanks to the combination of pinto beans and chickpeas. Protein is vital for muscle repair, energy production, and keeping you full for longer. It’s an excellent option for anyone looking to incorporate more plant-based protein into their diet.

Rich in Antioxidants and Vitamins

The fire-roasted peppers, corn, and sweet potatoes are loaded with vitamins like A and C, which boost your immune system during cold and flu season. Sweet potatoes, in particular, are an excellent source of beta-carotene, which supports healthy skin and vision.

Anti-Inflammatory Benefits

The spices in this stew—smoked paprika, chili powder, and cumin—not only add bold flavor but also offer anti-inflammatory properties. Combined with the antioxidants in the vegetables, this stew helps combat inflammation and promotes overall health.

Perfect for Cold Weather

The warm, smoky flavors of this cowboy stew are comforting on a chilly day. Its hearty texture and rich spices make it a satisfying and grounding meal. Plus, the toppings—avocado, cilantro, and lime—add brightness and balance, making it a vibrant winter dish.

A Healthy, Wholesome Comfort Food

Whether you’re looking for a high-fiber, protein-packed meal or simply craving a cozy bowl of stew, this recipe checks all the boxes. It’s easy to prepare, nutrient-rich, and deliciously warming—perfect for fueling your body and lifting your spirits on a cold winter day. Enjoy and remember to always Set the table with Love.

Ingredients

• 1 tablespoon olive oil (or your preferred cooking oil)

• 1 medium onion, diced

• 3 cloves garlic, minced

• 1 large sweet potato, peeled and diced into small cubes

• 1 cup fire-roasted peppers, diced

• 1 cup fire-roasted corn (drained if canned)

• 1 can (15 oz) organic pinto beans, drained and rinsed

• 1 can (15 oz) organic chickpeas, drained and rinsed

• 1 teaspoon smoked paprika

• 1 teaspoon chili powder

• 1 teaspoon cumin powder

• 1 teaspoon garlic powder

• 1 teaspoon sea salt

• 3 cups vegetable broth

• Louisiana hot sauce, to taste

For Toppings

• 1 avocado, sliced

• Fresh cilantro, chopped

• 1 lime, cut into wedges

Instructions

1. Sauté Aromatics

Heat the olive oil in a large pot over medium heat. Add the diced onions and cook until translucent, about 5 minutes. Add the minced garlic and cook for another 1 minute.

2. Cook the Sweet Potatoes

Stir in the diced sweet potatoes and cook for 5 minutes, allowing them to soften slightly.

3. Add Spices

Sprinkle the smoked paprika, chili powder, cumin powder, and garlic, powder and salt over the sweet potatoes and stir well to coat.

4. Add Vegetables and Beans

Add the fire-roasted peppers, fire-roasted corn, pinto beans, and chickpeas. Mix well.

5. Simmer the Stew

Pour in the vegetable broth and stir to combine. Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, or until the sweet potatoes are tender.

6. Finish with Heat

Taste and adjust seasoning. Add a few dashes of Louisiana hot sauce for heat and flavor.

7. Serve and Garnish

Ladle the stew into bowls. Top with sliced avocado, chopped cilantro, and a squeeze of fresh lime juice.
