Ritz Christmas “No Bake” Cookies

Awesome time on 104.7 The Fish instagram LIVE with my foodie friend Beth Bacall making these “no bake” Christmas 🎄 cookies using @ritzcrackers Wow!!!!!
THIS RECIPE IS SO VERSATILE:
You can use gluten free crackers, vegan
crackers and vegan chocolate. The perfect treat! I adapted the recipe from https://krollskorner.com/recipes/desserts/ritz-cracker-cookies/ ! I went wild with the sprinkles, crushed peppermint and edible gold spray I found at Kroger. The point here is to make it your own and enjoy your family!

Ingredients:
70 Ritz Crackers (2 sleeves)
12 oz White Chocolate oor Chocolate Baking Chips
2 Tbsp coconut oil
1 cup almond butter or nut butter of choice)
Lots of different kind of sprinkles, crushed peppermint and edible gold spray ( from Kroger or Hobby Lobby)

Instructions:
Lay out 1 sleeve of Ritz crackers on wax paper and spread ~2tsp. almond butter on each cracker. Carefully place another cracker on top to create a sandwich. (2 crackers per cookie)
Melt the chocolate in the microwave.
Microwave method: Place the coconut oil and white chocolate in a microwave-safe bowl and heat until melted. Heat for 1 minute, then stir and then heat for another minute and stir again. Should be melted now.

Once chocolate is melted and smooth, dunk each cookie into the white chocolate so it’s coated completely and set back on the wax paper. Finish off the cookies with decoration and repeat with remaining cookies. Place in the freezer for 15 minutes so the chocolate hardens, then enjoy!
NOTE: If using the spray, spray the cookies after the harden.
