Today that leftover chicken became two lunches in my kitchen:

a creamy high-protein chicken salad and a hearty Cobb salad with fire-roasted corn and sweet peas.

And the rest of the chicken? I turned it into a sandwich for my husband. A few grapes and a cookie on the side… because sometimes love looks like lunch.

High-Protein Chicken Salad

Ingredients

2 cups shredded baked chicken 1 stalk celery, finely chopped 2 tablespoons red onion, finely chopped 2 hard-boiled egg whites, chopped 1–2 teaspoons mustard 3–4 tablespoons plant-based mayo Salt to taste Cracked black pepper

Instructions

Add shredded chicken to a mixing bowl. Stir in celery, red onion, and chopped egg whites. Add mustard and plant-based mayo. Season with salt and cracked black pepper. Mix until creamy and well combined.

Ingredients

2 cups romaine or mixed greens, chopped 1 cup leftover baked chicken, chopped ¼ cup fire-roasted corn ¼ cup sweet peas 1 hard-boiled egg, chopped 2 slices turkey bacon, cooked and chopped ½ avocado, diced 2 tablespoons red onion, finely chopped Ranch dressing (to taste)

Instructions

Fill a bowl with chopped greens. Arrange chicken, corn, sweet peas, egg, turkey bacon, avocado, and red onion on top. Drizzle with ranch dressing. Toss gently or enjoy layered Cobb-style.
