Chicken Salad & a Cobb Salad with Fire-Roasted Corn and Sweet Peas
One of my favorite things in the kitchen is discovering how one simple ingredient can become several nourishing meals. Leftover baked chicken is one of those quiet heroes. With just a few fresh ingredients, it can turn into something comforting, satisfying, and beautifully simple.

Today that leftover chicken became two lunches in my kitchen:
a creamy high-protein chicken salad and a hearty Cobb salad with fire-roasted corn and sweet peas.
Both are easy, nourishing, and full of flavor — the kind of meals that remind me that good food doesn’t have to be complicated to feel abundant.
And the rest of the chicken? I turned it into a sandwich for my husband. A few grapes and a cookie on the side… because sometimes love looks like lunch.

High-Protein Chicken Salad
This is one of those simple recipes that always feels satisfying. The egg whites add extra protein, while the celery and red onion give it a little crunch.
Ingredients
2 cups shredded baked chicken 1 stalk celery, finely chopped 2 tablespoons red onion, finely chopped 2 hard-boiled egg whites, chopped 1–2 teaspoons mustard 3–4 tablespoons plant-based mayo Salt to taste Cracked black pepper
Instructions
Add shredded chicken to a mixing bowl. Stir in celery, red onion, and chopped egg whites. Add mustard and plant-based mayo. Season with salt and cracked black pepper. Mix until creamy and well combined.
Serving Ideas
Over a bed of greens In lettuce wraps On toasted sourdough Stuffed in an avocado As a quick protein bowl for lunch
This recipe is simple, protein-rich, and incredibly versatile.
Cobb Salad with Fire-Roasted Corn & Sweet Peas
A traditional Cobb salad is already hearty, but adding fire-roasted corn and sweet peas brings a little sweetness, extra fiber, and more nourishment to the bowl.
Ingredients
2 cups romaine or mixed greens, chopped 1 cup leftover baked chicken, chopped ¼ cup fire-roasted corn ¼ cup sweet peas 1 hard-boiled egg, chopped 2 slices turkey bacon, cooked and chopped ½ avocado, diced 2 tablespoons red onion, finely chopped Ranch dressing (to taste)
Instructions
Fill a bowl with chopped greens. Arrange chicken, corn, sweet peas, egg, turkey bacon, avocado, and red onion on top. Drizzle with ranch dressing. Toss gently or enjoy layered Cobb-style.
Why I Love This Bowl
Protein from the chicken and egg Fiber from the peas and greens Healthy fats from the avocado Just enough indulgence from the ranch dressing
It’s balanced, filling, and incredibly satisfying.
A Little Something for Mr. Washington
The remaining chicken became a simple chicken sandwich:
Low-carb bread Plant-based mayo Sliced baked chicken Turkey bacon
Served with a few grapes and a cookie.
Because sometimes the sweetest part of cooking is feeding the people you love.

The Beauty of Leftovers
Leftovers are not just about convenience — they’re about creativity.
With one roasted chicken you can create meals that are:
nourishing simple satisfying and full of care.
In my kitchen, these are the meals that remind me that living well and living beautifully often begins with something very small… like what’s already in the refrigerator.
