Gluten free Chai Masala Oatmeal Cranberry cookies

So this has been a week of baking for me. Today I decided that I wanted to make something chai inspired, so why not cookies. Chai tea is probably one of my favorite beverages to drink, hot or cold, especially during this time of year. The warm spices of cardamom, clove, nutmeg, and ginger says, Fall is here.

Gluten free Chai Masala Oatmeal Cranberry cookies

They also make an excellent breakfast cookie for my grandkids, because the batter is full of organic gluten free oats, cranberries, pumpkin seeds and chocolate chips. Now everyone doesn’t like pumpkin seeds, so added them to a few of the cookies. The great thing about a cookie like this, you can separate the batter and let everyone add their own ingredients, since the add ins go into the recipe at the end. You can add in, flaxseeds, your favorite nuts, chia seeds, white chocolate chips, even small bits of dried ginger. The possibilities are endless. I hope you enjoy this recipe as much as we have. INGREDIENTS:

1 stick unsalted butter, at room temperature, and 1/2 cup grapeseed or coconut oil

1 cup dark brown sugar

1// cup natural cane sugar

1 teaspoon ground cardamom

1 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 teaspoon sea salt

1/8 ground black pepper

2 organic eggs

3 cups gluten-free oats

INSTRUCTIONS:

Preheat the oven to 350°F (180°C). You will need two cookie sheets for this.

In a large bowl, beat the butter and oil with a handheld electric mixer on medium to high speed for 30 seconds. Add the Sugar, baking soda, spices, and salt. Beat until combined, scraping the sides of the bowl. Beat in the eggs and vanilla extract. Beat in flour and add in the oats. Stir in chocolate chips, cranberries and pumpkin seeds.

Drop the dough about 1/4- 1/2 cup measures. I like making bigger cookies, place the dough on baking sheets with parchment paper, spacing them 2 to 3 inches apart.

Bake for 12 to 14 minutes or until the cookies are lightly browned and the centers appear set. Cool on the baking sheets for 2 minutes. Transfer the cookies to a wire rack and let cool to room temperature and Enjoy with a cup of tea.
