Vegan Banana Nut Bread

Ingredients:

  • 3 medium overripe bananas
  • 1/3 cup organic granulated sugar
  • 1/3 cup organic brown sugar
  • 1/3 cup grapeseed oil or coconut oil
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg (optional)
  • 1/8 teaspoon clove (optional)
  • 1 cup chopped walnuts

Instructions:

  1. Preheat the oven to 350°.
  2. Lightly oil a 9-inch loaf pan and line with parchment paper.
  3. Mash peeled bananas in a large bowl.
  4. Add sugar, brown sugar, oil, and vanilla. Stir well.
  5. Add flour, then sprinkle baking soda, spices, and salt.
  6. Stir until just mixed; avoid overmixing. The batter will be thick.
  7. Fold in the walnuts.
  8. Spoon the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50 minutes or until a toothpick comes out clean.
