Vegan Banana Nut Bread
Ingredients:
- 3 medium overripe bananas
- 1/3 cup organic granulated sugar
- 1/3 cup organic brown sugar
- 1/3 cup grapeseed oil or coconut oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/4 teaspoon nutmeg (optional)
- 1/8 teaspoon clove (optional)
- 1 cup chopped walnuts
Instructions:
- Preheat the oven to 350°.
- Lightly oil a 9-inch loaf pan and line with parchment paper.
- Mash peeled bananas in a large bowl.
- Add sugar, brown sugar, oil, and vanilla. Stir well.
- Add flour, then sprinkle baking soda, spices, and salt.
- Stir until just mixed; avoid overmixing. The batter will be thick.
- Fold in the walnuts.
- Spoon the batter into the prepared loaf pan and smooth the top.
- Bake for 50 minutes or until a toothpick comes out clean.
