Watermelon Salad with Fried Capers

Summer is over I know, but I love this salad and the fried capers takes it to another level. I believe it’s one you can have anytime during the year when just need to experience freshness.

Watermelon and Basil salad with Fried Capers and Honey

Ingredients:

2 cups watermelon, roughly cubed

1 1/2 tbsp capers

1 tbsp olive oil

basil to garnish

pinch of fleur de sel

Directions:

In a sauce pan add the olive oil on medium high heat. Dry off the capers and add them to the pan. Cook until crispy about 2 minutes. Remove from the heat. Drain capers on a paper towel.  On a plate add the cubed watermelons. Sprinkle the capers over the watermelon and garnish with basil leaves,  pinch of fleur de del and a little olive oil,  if you like.
