Hot Chocolate Chunk Brownies

Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
1 teaspoon espresso powder
1 tablespoon good-quality hot chocolate mix
1/2 cup unsalted butter
1/2 cup neutral oil ( I used grapeseed oil )
1 1/3 cups granulated sugar, divided
2 large eggs + 1 egg yolk
1 teaspoon vanilla extract
1/2 cup chocolate chunks (for topping)

Instructions

Preheat oven to 350°F. Line a 9×9-inch pan with parchment paper and lightly spray.

In a large bowl, sift together flour, baking powder, salt, cocoa powder, espresso powder, and hot chocolate mix. Set aside.

In a saucepan, combine butter, oil, and 1/3 cup sugar. Heat over medium, stirring until melted. Remove from heat.

In a separate bowl, whisk eggs, egg yolk, vanilla, and remaining sugar until smooth and glossy.

Slowly pour the warm butter mixture into the egg mixture, whisking constantly.

Gently fold in the dry ingredients until just combined. Do not overmix.

Spread batter into prepared pan and smooth the top. Sprinkle chocolate chunks evenly over the batter.

Bake for 28 to 30 minutes, until the edges are set and the top is shiny with slight cracks.

Allow to cool completely before slicing.
