There are some recipes that feel like more than dessert. They feel like a moment. A pause. A quiet way of saying, “I thought about you.”
These Hot Chocolate Chunk Brownies are exactly that.
I started with a classic brownie base—rich cocoa, a touch of espresso to deepen the flavor—and then added something that feels both nostalgic and indulgent: a tablespoon of good hot chocolate mix. It softens the edges of the cocoa, bringing a creamy, almost familiar warmth that reminds you of cozy evenings and slow conversations.
And then, the finish. Chocolate chunks scattered across the top before baking. Not just for beauty, but for those pockets of melted chocolate that greet you in every bite.
This is the kind of dessert you make when you want to show up for someone. When you want to nourish more than just hunger.

Because food, when made with intention, always carries something deeper.

Hot Chocolate Chunk Brownies
Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsweetened cocoa powder
1 teaspoon espresso powder
1 tablespoon good-quality hot chocolate mix
1/2 cup unsalted butter
1/2 cup neutral oil ( I used grapeseed oil )
1 1/3 cups granulated sugar, divided
2 large eggs + 1 egg yolk
1 teaspoon vanilla extract
1/2 cup chocolate chunks (for topping)
Instructions
Preheat oven to 350°F. Line a 9×9-inch pan with parchment paper and lightly spray.
In a large bowl, sift together flour, baking powder, salt, cocoa powder, espresso powder, and hot chocolate mix. Set aside.
In a saucepan, combine butter, oil, and 1/3 cup sugar. Heat over medium, stirring until melted. Remove from heat.
In a separate bowl, whisk eggs, egg yolk, vanilla, and remaining sugar until smooth and glossy.
Slowly pour the warm butter mixture into the egg mixture, whisking constantly.
Gently fold in the dry ingredients until just combined. Do not overmix.
Spread batter into prepared pan and smooth the top. Sprinkle chocolate chunks evenly over the batter.
Bake for 28 to 30 minutes, until the edges are set and the top is shiny with slight cracks.
Allow to cool completely before slicing.
A Thought to Carry With You
Sometimes the simplest acts—like baking a pan of brownies—become the most meaningful. A plate left at a doorstep. A quiet delivery to a friend. A moment shared at the table.
This is what it means to set the table with love.
Live Well. Live Beautifully. Live You.
