Cinnamon Roll and Coffee Baked Oatmeal

Yes! You read it right. I woke up this morning wanting a cinnamon roll and a cup of coffee, but I need to stick to my nutritional plan as well, so what’s a girl to do?

Ingredients

Hmm, I could add all those ideas in baked oatmeal. I would be getting my caffeine, fiber, and protein since the recipe requires an egg and all would be well in my “try to stick to my healthy eating plan and have sweets at the same time world”. Yay me!

Into the oven

This will probably be a seriously healthy alternative for me from now on. It is quick, easy, and delicious, and it gives me that sweetness that I am craving. You can make it your own, add chocolate chips on top, or even slivered almonds would be fantastic, but whatever you do always remember to Set the Table with Love. 💕

Baked and served with Greek yogurt, that’s my icing 😏

Ingredients

•1/2 cup rolled oats

•1/4 cup oat milk

•1 small banana

•1 egg

•1 tbsp maple syrup

•1/4 tsp baking powder

•1 pinch of salt

Instructions

1. Preheat the oven to 350°F. Blend all of the ingredients in a blender until smooth and combined.

2. Pour the batter into a lightly greased 8 ounce ramekin. Add pieces of the cinnamon butter on top, try to place it in a spiral design on one side of the oatmeal batter. Add the instant coffee liquid on the other side of oatmeal batter also in a spiral design.

3. Bake for 20 minutes or until the edges pull away, the top springs back, and a toothpick inserted comes out clean. Remove, let cool slightly and enjoy!

Cinnamon butter/ Instant Coffee

Ingredients

• 1/2 tbsp butter, soften

• 1 tsp cinnamon

• 1 tsp sugar

Instructions

Using a spoon combine all ingredients together. Make instant coffee, according to instructions on the container. You will use these as your garnishes.
