I absolutely love salmon. Now let me confess, it wasn’t my favorite fish when I was younger, but I think the problem was, one how it was prepared and the fact it wasn’t fresh. I have learned a few things about this heart-healthy, rich in nutrients, full-bodied deliciousness. First of all, fresh, if possible go with fresh, wild-caught and never overcook it. I have prepared salmon on the grill, pan-seared, and also in parchment paper. However, my favorite way is baking it in butter with garlic and parsley. O
This recipe is simple, easy and your whole family will enjoy it. My grandkid’s little friend stayed over for dinner and she had two pieces. Who doesn’t love butter and garlic?

• 4 skinless salmon fillets
• 1 stick, unsalted butter
• 2 1/2 tablespoons minced garlic, divided
• 2 tablespoons fresh chopped parsley
Instructions:
Preheat oven 400 F. Place salmon fillets on a parchment paper-lined cookie sheet. Melt the butter in a microwaveable bowl, add the garlic and parsley.
Pour mixture over salmon. Bake salmon for about 8-10 minutes. TURN up the oven to broil for 2 minutes, this will allow fish to crisp up and get golden brown. Remove from oven and serve immediately.
