There are certain times of the year when your body just asks for something warm, simple, and comforting.
For me, allergy season is one of those times.
When the air feels heavy, my throat feels a little irritated, or I just want something soothing and nourishing, I lean toward simple foods made with ingredients I already have in my kitchen. This creamy garlic soup is exactly that.
It is uncomplicated, deeply flavorful, and made with just a handful of ingredients: garlic, onion, vegetable broth, toasted gluten-free bread, red pepper flakes, olive oil, and a few simple seasonings.
No cream. No complicated roux. No long list of ingredients.
Just good food.
Why Garlic?
Garlic has been used in cooking and traditional food practices for generations, and for good reason.
Fresh garlic contains sulfur compounds, including one called allicin. Allicin forms when garlic is chopped, crushed, or chewed and has been studied for its antioxidant, antimicrobial, cardiovascular, and anti-inflammatory properties.
A simple kitchen tip: chop or crush your garlic and allow it to sit for about 10 minutes before cooking. This gives the natural compounds in the garlic a little time to develop before they are exposed to heat.
Garlic is also one of my favorite ways to build big flavor without relying on a lot of extra ingredients.

Simple Creamy Garlic Soup
Ingredients
15 garlic cloves, peeled
1 onion, roughly chopped
Olive oil, for sautéing
Red pepper flakes, to taste
4 cups vegetable broth
4–6 slices gluten-free toasted bread
1 tablespoon garlic powder
Salt, to taste
Directions
Heat a drizzle of olive oil in a large saucepan over medium-low heat.
Add the garlic and onion and sauté until softened and lightly caramelized, taking care not to burn the garlic.
Add the red pepper flakes and cook for another 30 seconds to 1 minute.
Transfer the garlic and onion mixture to a blender. Add the vegetable broth and blend until smooth.
Add the toasted bread, one piece at a time, and blend again until the soup reaches a smooth and creamy consistency. The bread acts as the thickener, so you can add more or less depending on how thick you like your soup.
You want it creamy with a little body, but still easily pourable.
Return the soup to the saucepan and warm over medium-low heat.
Season with the garlic powder and salt. Stir and allow everything to cook together for several minutes until the soup is heated through and the flavors have melded.
Serve warm.
A Little Bowl of Comfort
I don’t believe every meal has to be complicated to be nourishing.
Sometimes wellness looks like slowing down long enough to make yourself a warm bowl of soup.
The caramelized garlic gives this soup a rich, mellow flavor rather than an overpowering raw-garlic taste. The toasted bread makes it creamy without dairy, while the red pepper flakes give it just enough warmth.
And during allergy season, when I am craving something soothing, warm foods like this simply feel good.
This isn’t about calling one food a cure.
It is about using whole ingredients, cooking intentionally, and giving your body something comforting and nourishing.
Sometimes the simplest recipes are the ones you come back to again and again.
