Rustic Mediterranean comfort food with a little elegance. Here’s a delicious or main dish you can serve for Thanksgiving or friendgiving this holiday season.

There is something beautiful about a meal that feels both rustic and elegant. The kind of dish you can prepare in your kitchen, bring straight to the table, and invite everyone to gather around.
That’s exactly what inspired this Plant-Based Ratatouille with Vegan White Truffle Polenta.
Ratatouille is one of those timeless dishes that celebrates vegetables in their simplest, most beautiful form. Eggplant, zucchini, yellow squash, bell peppers, tomatoes, garlic, and fresh herbs come together to create a rich, savory dish full of Mediterranean flavor.
But I wanted to give this classic a little something extra.
Instead of serving the ratatouille on its own, I paired it with a silky, creamy vegan white truffle polenta. And let me tell you, the combination is something special!
I infused the polenta with @purechilean white truffle oil, nutritional yeast for that lovely savory, Parmesan-like flavor, extra-creamy soy milk, and vegan butter. The result is a rich, velvety foundation that beautifully balances the bright acidity of the tomatoes and the earthy sweetness of the roasted vegetables.
And because I love food that encourages gathering, I served everything right in my All-Clad pan. Straight from the stovetop to the table. No fuss, just beautiful food meant to be shared.

Rustic Garden Ratatouille

- 1 medium eggplant, cut into cubes
- 1 medium zucchini, diced
- 1 medium yellow squash, diced
- 1 red bell pepper, diced
- 1 yellow or orange bell pepper, diced
- 1 small red onion, diced
- 4 garlic cloves, minced
- 1 (28-ounce) can crushed San Marzano tomatoes
- 2 tablespoons tomato paste
- 3 tablespoons extra virgin olive oil, divided
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- 1 teaspoon fresh thyme leaves
- 1 tablespoon balsamic vinegar
- Salt and freshly cracked black pepper, to taste
- Fresh basil, for garnish
Instructions
- Preheat oven to 400°F.
- Toss eggplant, zucchini, yellow squash, and bell peppers with 2 tablespoons olive oil, salt, and pepper.
- Spread vegetables onto a baking sheet and roast for 20–25 minutes, until tender and lightly caramelized.
- Meanwhile, heat the remaining olive oil in a large skillet or Dutch oven. Add red onion and sauté for 4–5 minutes.
- Add garlic and tomato paste. Cook for another minute until fragrant.
- Stir in crushed tomatoes, Italian seasoning, smoked paprika, and thyme. Simmer for 10–15 minutes.
- Fold in the roasted vegetables and balsamic vinegar. Allow everything to simmer together for another 5 minutes.
- Finish with fresh basil and adjust seasoning as needed.
The secret is allowing the vegetables to retain some of their texture. You want them tender, not mushy.

Creamy Vegan
White Truffle Polenta
Ingredients
- 1 cup yellow corn polenta
- 4 cups vegetable broth
- 1 cup unsweetened extra-creamy non dairy milk
- 3 tablespoons vegan butter
- 3 tablespoons nutritional yeast sub. for parmesan
- 1–2 teaspoons @purechilean white truffle oil, to taste
- ½ teaspoon garlic powder
- Salt and freshly cracked black pepper, to taste
Instructions
- In a medium saucepan, bring vegetable broth and non-dairy milk to a gentle simmer.
- Slowly whisk in the polenta, stirring continuously to prevent lumps.
- Reduce heat to low and cook according to package directions, stirring frequently, until tender and creamy.
- Fold in vegan butter, nutritional yeast, and garlic powder.
- Season with salt and freshly cracked black pepper.
- Remove from heat and stir in the white truffle oil.
A little kitchen tip: Add your truffle oil at the very end. Its delicate aroma is worth preserving! Start with a teaspoon, taste, and add more if you’d like a more pronounced truffle flavor.
If the polenta becomes too thick, simply stir in a little warm soy milk until you reach that silky consistency.
Bringing It All Together
Spoon the creamy white truffle polenta onto a serving platter or into the center of your serving pan. Top generously with the warm ratatouille, allowing the beautiful tomato sauce and roasted vegetables to settle into the polenta.
Finish with fresh basil, thyme, cracked black pepper, and just a touch more white truffle oil.
I love the contrast of the colorful vegetables against the creamy golden polenta. It’s simple, beautiful, and full of flavor.
A Little More Than a Meal
This is the kind of food that reminds me why I love bringing people back to the table.
It doesn’t have to be complicated. It doesn’t have to be perfect. Sometimes it’s a beautiful pan of vegetables, something creamy underneath, and a few people gathered around the table.
Plant-based cooking doesn’t mean sacrificing comfort, richness, or flavor. It simply invites us to look at familiar ingredients in a new way.
And this dish does exactly that.
Set the Table with Love. Because the best meals are always about more than what’s on the plate.
