One Pot – Two Salads – Red Quinoa Salad two ways.

When I say that this is super easy, it is super easy. Both of these salads are created by using one pot of red quinoa. All you have to do is open up a few ingredients and cut up a lemon and a cucumber, parsley and mint.

The first salad is an inspired Greek style red quinoa salad and the other one is a tzatziki red quinoa salad. You will have to first cook some red quinoa following the directions on the back of the package. Once cooked, set it aside. Now I am going to first suggest a few ingredients to toss in your Greek inspired version first then the tzatziki version, but here’s where you can get creative and add whatever you like. Let your imagination run wild, but never forget to Set the Table with Love. 💕

Greek version:

marinated baby artichokes hearts

kalamata olives

capers

sundried tomatoes

parsley, chopped

1 teaspoon dried oregano

good extra virgin olive oil

lemon juice

sea salt

cracked black pepper

Instructions:

Tzatziki version:

1 cucumber, diced

1 small tomato, diced

1/2 cup red onions, diced

1/4 cup parsley, chopped

1 tablespoon mint. chopped

lemon juice

good olive oil

sea salt and cracked black pepper to taste

Instructions:

Separate the quinoa into two large bowls. Add all ingredients to your quinoa. Stir to incorporate ingredients, taste and adjust seasonings if you need to.
