Sweet and Spicy Chipotle Avocado and Arugula Salad

Salad? Boring. Well here’s a quick salad you can whip up that’s loaded with flavor and you can make it in minutes. What makes it so awesome is the Chipotle dressing. You guys will want to put this stuff over everything! Like everything, well maybe not ice cream, hmm…πŸ€” .

All you would need is your favorite salad greens. I used arugula, add the greens to a bowl, add slices of avocado , cranberries and maybe nuts, like pistachios. Okay are you ready. Now slowly with a big smile on your face, drizzle that yummy Chipotle dressing and that’s all folks.

Sweet and Spicy Chipotle Avocado and Arugula Salad

Ingredients 6 tablespoons red wine vinegar

1/4 cup organic honey

3/4 cup organic extra virgin olive oil

1/2 teaspoon dried oregano

1-1/2 teaspoons sea salt 1/2 teaspoon freshly ground black pepper

2 chipotle peppers in adobo sauce

2 small garlic cloves, roughly chopped


Combine all of the ingredients in a blender or mini food processor and process until smooth. Taste and adjust seasoning if necessary. Serve immediately or store in an airtight container in the refrigerator.
