Ingredients:
1/4 tsp salt
1/4 cup liquid coconut oil
1/2 tsp nutmeg
1 tbsp baking powder
1 egg, slightly beaten
1 tsp cinnamon
1 tsp baking soda
1/2 cup coconut sugar
1 cup cashew milk or any non dairy milk
1/2 cup blueberries
1 cup oat flour
1 scoop Green protein powder
1 1/4 cups old fashioned oats
3 bananas, peeled and mashed
Preparation:
- Preheat oven to 400 degrees.
- In a medium bowl, mix the oats and cashew milk , set aside.
- In a large bowl, whisk together the oat flour, Green powder mix, coconut sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Stir in mashed bananas, oatmeal mixture, and egg. Stir in oil, then fold in blueberries.
- Fill muffin cups 2/3 full and bake for 16 – 20 minutes.
