Gluten Free Blueberry Banana Oatmeal Muffins

Hard work and Fiber! Fiber! Fiber! + Water! Water! Water! Makes for a happy tummy. Moving our bodies, plus consuming foods his digestible fiber with plenty of water helps with bloating and other digestive problems.


Eating foods rich in soluble fiber may help you lose belly fat. Soluble fiber helps keep your gut bacteria healthy and promotes overall fat loss by reducing your appetite, but you need ro drink plenty of water when consuming fiber. Drinking water and ingesting fiber should go hand in hand. Fiber from the food you eat absorbs water, which makes stools bulkier so they move faster and are easier to eliminate.

Ingredients:
1/4 tsp salt
1/4 cup liquid coconut oil
1/2 tsp nutmeg
1 tbsp baking powder
1 egg, slightly beaten
1 tsp cinnamon
1 tsp baking soda
1/2 cup coconut sugar
1 cup cashew milk or any non dairy milk
1/2 cup blueberries
1 cup oat flour
1 scoop Green protein powder
1 1/4 cups old fashioned oats
3 bananas, peeled and mashed

Preparation:

  1. Preheat oven to 400 degrees.
  2. In a medium bowl, mix the oats and cashew milk , set aside.
  3. In a large bowl, whisk together the oat flour, Green powder mix, coconut sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Stir in mashed bananas, oatmeal mixture, and egg. Stir in oil, then fold in blueberries.
  5. Fill muffin cups 2/3 full and bake for 16 – 20 minutes.
