Spicy Mexican Beans, Corn,Vegan Mexican Sausage and Fresco on a Tater Tot Waffle – Yes!

Having grandkids in the house takes my imagination to new and fun levels and it gets conveyed in my food as well. One of the foods my grandkids love is tater tots. They are not a regular in the house, but I do give in occasionally. So tonight I decided, let’s do something fun with these tater tots. Let’s make them into waffles. This recipe is super easy and you can allow your imagination to run wild with the toppings. Tonight I went with a Mexican version; black beans, Mexican vegan sausage, fresh corn , peppers, red onions and fresco, etc. etc.

You could also top it with slices of smoked salmon, cream cheese and capers and not to mention, of course, just go with eggs, mounds cheese of gouda and chives.

Remember, dinner time can be a very creative experience for you and your kids, even with tater tots, So no matter how you like your tater tots, always Set the Table with Love.

This recipe doesn’t have the vegan Mexican sausage. If you like to add it, I used Field Roast Spicy Mexican Sausage. Field Roast Sausage . You can chop about a half of cup or more in this recipe. Put sausage in the pan with the beans, during the cooking process. Note: this sausage is very 🌶🌶🌶.

Here’s the simplest thing , the tater tots:

Heat up your waffle iron. Thaw out tater tots enough to fill your waffle iron, just with one layer, don’t overlap. Brush oil on top and bottom of the waffle iron. Place tater tots on the waffle iron, close the lid and allow them to cook until golden brown. Remove. Plate. Add toppings and Enjoy.
