So here’s what happened and I am going to share with you how easy these madeleines are to make. But first this plate:

Charred Peaches and Cream with Sweet Orange Honey and Thyme Madeleines

Sweet Orange Honey and Thyme Cornbread Madeleines

Ingredients:
  • 2 cups self-rising yellow cornmeal mix
  • 1/2 cup all-purpose flour
  • 1/4 cup organic cane sugar
  • 1 tablespoon orange zest
  • 1 sprig thymes leaves, used the leaves only, not the stem
  • 1 tablespoon organic honey
  • 2 cups extra creamy oat milk
  • 1/2 cup Pure Chilean Meyer Lemon Extra Virgin Olive
  • 2 large eggs , lightly beaten

Instructions:

Preheat oven to 425°. Whisk together cornmeal mix, flour, sugar, thyme leaves, and orange zest in a large bowl. Next add in the honey, oat milk, extra virgin olive oil, and eggs. Whisk together just until blended. Spoon batter into lightly greased shiny madeleine pans, filling three-fourths full. Bake, in batches, 16 to 18 minutes or until golden brown. Remove from pans immediately. Serve hot, or cool completely on wire racks.

I have been a devoted yoga and meditation practitioner and a nutrition wellness coach for over 25 years, this was my road to staying as healthy as possible with failing kidneys and all the complications that come with it.
