Tagliatelle Nests in Chickpea Pasta Sauce

Ingredients:
– 1 pack of Tagliatelle Nest Pasta
– 1 bottle of high-quality Marinara Sauce with herbs
– 1 bottle of Roasted Red and Yellow Italian Style Peppers
– 1 small jar of Kalamata Olives (you’ll need 1/2 cup)
– 1 can of Organic Chickpeas, rinsed and drained
– 1 tablespoon of olive oil
– 2 garlic cloves, minced
– Sea salt and cracked black pepper, to taste
– A large pot of water
Instructions:
1. Start by boiling water in a large pot. Once boiling, gently add the tagliatelle nests and cook according to the package instructions. After cooking, drain the pasta using a pasta drainer and set it aside.
2. In a deep, large saucepan, heat the olive oil over medium heat and add the minced garlic. Cook for about a minute.
3. Add the drained chickpeas and a pinch of salt. Stir and cook for approximately 2 minutes.
4. Cut the Roasted Red and Yellow Italian Style Peppers into small pieces and add them to the chickpeas. Stir and cook for another minute or two.
5. Incorporate the marinara sauce and 1/2 cup of olives into the mixture.
6. Reduce the heat and let it simmer, then add the tagliatelle nests into the sauce. Cover with a lid and cook for an additional 2 minutes. Remove from heat.
7. Finish by garnishing with fresh parsley or basil. Drizzle some high-quality extra virgin olive oil and sprinkle with vegan parmesan or vegetarian BelGioioso parmesan cheese.
